Bansha businesswoman is the first to manufacture modelling chocolate in Ireland

Last November, an opportunity created and funded by South Tipperary Development Company (STDC) and supported by Tipperary Town Businesses, was launched by Minister Simon Coveney at Tipperary Technology Park. Fifteen unemployed or underemployed people were asked to avail of a chance to make a move from being unemployed to becoming self-employed. They were required to have a business idea that needed a structured platform to progress their idea through training and business mentoring which was offered as part of the ‘Tipperary Town New Enterprise Competition’. Participants were offered practical assistance to develop their idea from concept stage to business start up.

Vera O’Sullivan from Bansha, originally from Prague, Czech Republic moved to Ireland and got married 17-years ago and in January 2013 she won a place on the South Tipperary Development Company /Dolmen Entrepreneurship programme.

“The benefits have been great for me as not only did I get a chance to meet like- minded people and to complete courses in HACCP and Train the Trainer, but also the opportunity to focus on developing the business model for my own company, ‘Vera Miklas’, the first manufacturer of Modelling Chocolate in Ireland from a base in Tipperary Town.

I have been a fulltime homemaker for the last 17 years and it was from making birthday cakes for my four children that I developed a keen interest in cake decorating. Soon I was asked to decorate cakes for the wider family and then for friends and it grew from there. I took a number of cake decorating courses, joined the sugar craft guild and I was hooked. The main appeal for me was the possibility to express my creativity through each cake.

I started using modelling chocolate when giving classes to primary school children in the area. Modelling chocolate is an edible, pliable paste made from the finest Belgian chocolate. It is much easier to use than sugar paste when modelling figurines, making characters, using moulds and making decorative flowers. I found from my research that modelling chocolate is very well established in the USA and that it still is at an early stage of adoption by cake decorators in the UK. However to my surprise, there is no Irish manufacturer of Modelling Chocolate and I could only source supply from a small number of UK based suppliers.”

To learn more Vera attended a dedicated course in Holland by a leading expert in modelling chocolate from the USA. There she perfected a recipe for the manufacturing of modelling chocolate and secured guidance from the Enterprise Board in South Tipperary, Teagasc and the FSAI during the process in order to comply with all food regulations.
