A feast of culinary delights was the order of the day when a group of Third Year students from Colaiste Chluain Meala visited The Tannery restaurant in Dungarvan in May where they met with its proprietor, celebrity chef Paul Flynn, who runs a cookery school in conjunction with his renowned restaurant.
The students were engrossed as they watched Paul demonstrating how to put together a variety of simple appetising dishes that appealed to the eye as well as the palate. They visited his garden at the back of his premises to see the many organic vegetables and herbs that he grows specifically for the restaurant.
They also saw some hens, the producers of organic eggs for the restaurant’s kitchen, roaming freely about the grounds.
Paul Flynn taught the students how to cook a bean stew flavoured with herbs and some delicious desserts, which proved a real winner with the group.
The students were fascinated with the experience and had a real insight in the complexity of running a successful restaurant.
